From Start to Final Product
In our facilities, the production behind the final product follows a strict process, from the moment we receive the new harvest from our island's pistachio producers to when the product reaches your hands.

All stages are exclusively carried out in our unit, ensuring complete control of the fruit throughout the entire process.
Reception and Quality Control of Pistachios:
Immediately after receiving the new crop from the pistachio producers of our island, the pistachios undergo a detailed quality control process. This inspection includes assessing the appearance, size, and health of the nuts, ensuring that only the best pistachios proceed to the next stage of processing.
Mechanical Air Separation:
Following this, the pistachios are subjected to a mechanical air sorting process, which effectively removes any foreign bodies or materials. This procedure guarantees the cleanliness and safety of the final product.


Mechanical Separation:
After air sorting, the pistachios are mechanically separated into open and closed nuts. This process is critical for their further processing in the next stages.


Storage:
The pistachios are then stored in special refrigerated chambers at temperatures of 9-11°C and internal humidity of 45%-65%, maintaining their freshness and quality until further processing.


Mechanical Crushing and Processing:
The closed pistachios, or kernels, are mechanically crushed to be transformed into by-products. This process allows for the creation of different products from the same raw material.
Roasting:
The next phase is roasted, where the pistachios undergo mechanical stirring and are then baked in ovens with hot air. This process ensures that the taste and quality of the pistachios are maintained at the highest possible level.
Advanced Technology and Pistachio Products:
Combining the advanced technology of our facilities with the unique recipes we create, we have a rich catalog of over 30 quality products based on the Aegina P.D.O. pistachio. From authentic pistachio butter to advanced sweet creations, our laboratory has been established as the first and only Vertical Pistachio Processing and Production Unit in the Balkans, enhancing our reputation on an international level.
Packaging:
Finally, the pistachios are mechanically packaged and boxed, ensuring the safe transport and storage of the final product. The packaging is designed to protect the product and maintain its freshness for a longer period.
